Fresh Peach Pie

Ingredients:
2 cups water
2 1/2 cups sugar
3/4 cup cornstarch
1/8 tsp. salt
1/2 cup water
1 3 ounce package peach jello
1/4 cup lemon juice
16 medium peaches, peeled and sliced
2 9" pie crusts, baked
2 cups whipping cream

Directions:
Bring 2 cups water to boil. Meanwhile combine sugar, cornstarch, salt, and water and make into a paste. Pour into boiling water and cook until very thick, stirring constantly. Add package of peach jello and cook 1 more minute. Remove from heat and add lemon juice. Cool mixture and stir occasionally while you peel and slice peaches. Put into mixture and pour into baked pie shells. Cover with handi-wrap and refrigerate for a few hours or overnight. Whip cream until stiff and sweeten. Spread entire pie with cream and return to refrigerator until ready to serve.
