Ingredients:
2 1/2 cup flour
3 tsp. baking powder
1/4 tsp. salt
1 1/2 cup sugar
2/3 cup shortening
2 eggs, well beaten
1 1/4 cup milk
1 tsp. vanilla
Directions:
Place sugar and shortening in large mixing bowl. Cream together. Add dry ingredients and then wet ingredients. Beat for 3 minutes. Pour into 9" baking pan. Bake for 30 minutes at 375 degrees. Frost with white or pink frosting and sprinkle with coconut.
